Como todos los años, los panaderos franceses eligieron a la mejor baguette

Este año, el ganador es Djibril Bodian , que por segunda vez obtuvo el premio. Bodian tiene ahora el privilegio de abastecer de pan al palacio presidencial francés durante un año.

Djibril Bodian obtuvo el premio a la mejor baguette de París entre 231 concursantes.

Los criterios que se utilizan para la selección los define una ley de 1993. Y son los siguientes: harina sin conservadores, agua natural, sal de Guérande y levadura de panadero.

Los candidatos tienen que producir 40 baguettes de 50 centímetros de longitud, con un margen de tolerancia de 5 centímetros, y un peso de 250 gramos, con un margen de tolerancia de 5 gramos.

Las baguettes deben llevar cuatro marcas de cuchillo obligatorias.

Luego, el jurado examinará su aspecto, las probará, y juzgará la miga y los alvéolos, esas burbujas de aire que quedan atrapadas en la masa. Cuanto más irregular y más vaporosa sea la baguette, más cercana estará de los criterios franceses. Y también se juzgará el sabor y la cocción.

La panadería en donde trabaja Djibril Bodian es  Le Grenier à Pain, un establecimiento muy conocido en la ciudad y que cuenta con varias sucursales.
